Based on an Italian family recipe, this is a raw, probiotic rich version of a Sicilian Eggplant Pickle.  Thinly sliced globe eggplants are mixed with garlic, chilli, fresh oregano, parsley and basil and fermented for a number of weeks using wild fermentation methods under controlled conditions to develop the sour taste characteristic of lacto-fermentation.
